Roast Goose with a Tangle of Greens, Potato Knish and Spicy Fruit Relish

Goose A 5kg (11lb) goose serves six, or four with plenty of leftovers. Cook for 22 minutes per kg (10 minutes per lb) Preheat oven to 190C/375f/Gas mark 5. Prick the skin all over with a sharp fork, use a little olive oil to rub in salt and pepper. Put a little water in a deep baking pan. Steam encourages fat to drain and stops skin browning too quickly. Rest goose on metal grill to allow fat to pour off into pan.
