New Year would not be complete for me without a flavour of Scotland - and I am not thinking in particular of haggis, which I do believe is an acquired taste, and one I really enjoy. Scotland also has a long tradition of fine ingredients incorporated into dishes which have more than passed the test of time.
Scottish food varies depending on the region, whether it is grouse - which the Scots enjoy stuffed with cranberries and roasted - or venison. Although the wild deer still roam the highlands, much of the venison used for cooking is now farmed and consequently much more available with haunches and saddles for roasting, and other cuts trimmed and chopped up for use in casseroles and venison sausages.See the full content of this document
