Our way of roasting them is traditional in Britain today, but years ago, and probably still in southern Europe, the chestnut is treated differently. Chestnuts were slowly dried over an open fire, but were then ground and mixed with milk to make a form of porridge known as pollenta.

The sweet chestnut, Castanea sativa, is a native of Mediterranean lands and may have been introduced to Britain by the Romans. Here, generally speaking, our summers are too cool and those sold in shops are mainly imported from the south of France and Italy.
