Fennel Guards Against Witchcraft

Summary


Fennel grows in a wild spot near the coast, its distinctive smell strong on the wind. It is a sub- maritime plant, one I often find along waysides. Here in its sheltered spot it grows to almost four feet, its large deep green leaves smooth and made up of narrow feathery segments. In July and August, small yellow flowers bloom, in umbels with long stalks, all combined into a large compound umbel. The oval fruits have prominent ridges and it is a very elegant plant.

Fennel has been cultivated for a long time and is a herb used for flavouring as well as for garnishing. At midsummer it was often hung over one's front door against black witchcraft. I have used fennel in fish sauces and soups as well as in salad dressings. Oil extracted from the frits is used in confectionery, condiments, pickles, cordials and liqueurs. In a way it resembles dill but is a perennial here and generally taller, whereas dill is an annual or biennial.
