As it is Seafood Week fish is the natural choice for this month's recipe. For seafood fans Mitch Tonks is probably best known for his FishWorks restaurant, which started as a fishmongers and cafe where you chose your fish and it was cooked for you there and then. How fresh and instant is that? I remember many years ago being impressed by his first place in Bath, which has been followed by outlets in Bournemouth, Bristol and London.
