Summary
If you conducted a survey of the ten most popular foods at Christmas cheese would definitely be there. As someone who sells and loves the stuff you might think that I'm biased, but it is such a very special food: endless varieties of flavours with so few ingredients. Our aim in 2008 is to develop more new flavours to excite palates everywhere!
Over the years we have created brand-new cheeses with our cheesemaker friends and we now have ten that are made just for us. There are, though, other ways of creating different flavours. To get the very best out of cheese you should nurture and mature them so that they have a chance to reach peak condition.
